How To Plant
Spinach is a cool-season plant that thrives in spring and fall months. In the heat of summer, spinach will go into its reproductive phase, producing bitter-tasting leaves and a flowering seed stalk will emerge. This is known as bolting and is perfectly normal.
Spinach germinates best in soil temperatures of 50°-60°F, with a soil pH between 6.5-7.5.
In early spring, plant as soon as the ground can be worked. If sowing has to be done during warmer weather, irrigating can help cool the soil and improve germination. If no irrigation is used, summer sowing will have lower germination rates.
Sow in mid to late summer for a fall harvest. Spinach can also be planted from late summer until freeze-up in protected structures for fall, winter, and spring harvest. Using floating row covers offers additional winter protection.
For baby leaf: Sow in a 1/2″ apart, 2-3″ bands, 1/4-1/2 inch deep, about 40 seeds per foot. For successive plantings, plant every seven days.
For bunching and full size: Sow 10 seeds per foot, 1/4-1/2 inch deep, rows 12-18″ apart.
